We recommend that you use multiple griddles, one for turning and the other for garnishing (Or even two for turning and two for garnishing!). This is fast, efficient and enables you to take many crepes at a time. It is also worth noting that all sides and toppings should be prepared in advance so that there is no fussing over the lack of cheese or maple sauce in front of your wedding guests!
